Lamb Khati Roll and Papdi Chaat

First course
Samosa Channa Chaat (v, d, g)
Deconstructed spiced potato patty served with braised garam masala spiced chickpeas, cool minted yoghurt topped with tamarind chutney, and finally sprinkled with gram vermicelli or sev.
Paired with Finca La Colonia Coleccion Grüner Veltliner, Bodega Norton – Argentina
Second course
Chilli Paneer (v, g)
Homemade Indian cheese, stir-fried with spring onion, mixed peppers, chilli and garlic tossed together in a dark soy sauce. Indo-Chinese fusion.
Paired with Feudo Arancio Nero D’Avola, Sicilia – Italy
Third course
Makhani Murgh (n, d)
Tender pieces of chicken taken straight from the clay oven and blended into a smoked tomato sauce with generous helpings of cream and yoghurt, and a hint of dried fenugreek. Served with cumin rice.

Fourth course
Apple Jalebi with Lush Coconut Ice Cream (n, g)
Fresh Bramley apple ring fritters doused in a light golden syrup batter served with a luxurious coconut ice cream garnished with coconut shavings, chopped pistachio.
